21History
Domaine de Montille is a family estate in Volnay, with roots going back generations in the village. The modern chapter begins in 1947, when Hubert de Montille inherited 2.5 ha and vinified his first vintage. He ran a law practice in parallel for much of his career — the combination made him something of a celebrity figure in Burgundy — while steadily acquiring premier cru parcels in Volnay and Pommard. The wines became a touchstone for restrained, terroir-transparent red Burgundy, especially from the 1970s onwards.
His son Étienne joined in the 1980s, followed by his daughter Alix; the two now lead the estate. By 2011 the holdings had grown to roughly 20 ha, with around 75% at premier cru or grand cru level.
In 2001 Étienne took on management of Château de Puligny-Montrachet, introducing biodynamic farming and whole-cluster fermentation. The Montille family bought the château outright in 2012, and from the 2017 vintage its wines have been released under the Domaine de Montille label — making the estate an unusually rare combination: a top-tier red specialist and a top-tier white specialist at once.
Winemaking Approach
Domaine de Montille is a biodynamic producer across all parcels. Organic farming began in the mid-1990s, biodynamic conversion followed in 2005, and full organic certification came in 2012.
- Biodynamic farming timed to the biodynamic calendar. - Restrained extraction: the Hubert-era philosophy of gentle extraction and terroir transparency remains the estate's guiding principle. - Whole-cluster fermentation: under Étienne the proportion of whole clusters has grown, adding spice and aromatic lift.
The style is fine-drawn and notably elegant — transparent rather than heavy — and has become a reference point for modern Côte de Beaune red.
