Profile

12History
Domaine Jean-Marc Boillot is a Beaune-based estate with deep roots in the Côte de Beaune's family domaine tradition. Jean-Marc Boillot — grandson of Étienne Sauzet and trained under Jacques Seysses at Dujac — established the domaine after acquiring parcels from the Sauzet estate in the late 1980s. The holdings reflect that inheritance: Puligny-Montrachet premier crus at the core, supplemented by Pommard and Volnay reds.
Winemaking Approach
The domaine works 13 parcels across 5 communes — Puligny-Montrachet, Beaune, Volnay, Pommard, and Chassagne-Montrachet — with whites and reds in roughly equal measure. A single grand cru parcel in Bâtard-Montrachet (0.18 ha) crowns the white range. Boillot's approach favors extended barrel aging and careful extraction, aiming for wines that reward patience rather than early drinking.
