シャブリの町とスラン川を見下ろすグラン・クリュの丘において、ヴァルミュールは1935年に最初に格付けされた5つの特級畑の一つです。歴史的にもレ・クロに次ぐ高い評価を受けてきたこの畑は、主要な所有者に2.08ヘクタールを擁するドメーヌ・ベッサン=トランブレイをはじめ、ウィリアム・フェーヴル(1.11ヘクタール)、クリスチャン・モロー(1ヘクタール)、ルイ・モロー(0.99ヘクタール)らが名を連ねます。さらにラヴノー(0.75ヘクタール)やモロー・ノーデ(0.6ヘクタール)も区画を所有しています。醸造面では生産者により手法が異なり、ラヴノーのように発酵後に古い木樽で1年ほど寝かせるスタイルや、フェーヴルのように一部を木樽で醸造し、後にステンレスタンクで熟成させる手法などが見られます。

History

Valmur is one of the seven Chablis grand cru *climats*, occupying the central portion of the single grand cru hillside between Les Clos and Vaudésir. The Chablis AOC and its seven grands crus received formal recognition in 1938, and Valmur — like the others — traces its viticultural roots to the medieval Cistercians of Pontigny abbey, whose monks cleared and cultivated these slopes from the twelfth century onward.

Style & Terroir

Valmur sits on a steep southwest-facing slope at 150 to 200 metres elevation, its soils the Kimmeridgean limestone, clay, and fossilized oyster-shell mixture that defines Chablis grand cru terroir. What sets it apart within the hillside is a southeast-oriented sub-slope: long morning exposure without the full force of afternoon sun — a geometry that preserves freshness and aromatic precision even as the fruit reaches grand cru ripeness.

Chardonnay only. Grand cru regulations allow yields up to 54 hl/ha with a minimum potential alcohol of 11.0%.

Valmur tends toward a silkier texture and a more overtly floral and stone-fruit aromatic profile than the dense, austere Les Clos or the complex Vaudésir. Most bottles benefit from ten to fifteen years of cellaring before reaching their peak.
