Côte de Savant is a Chablis premier cru in the Beine commune, about 100 km northwest of the Côte d'Or. Beine lies on the western edge of the appellation, and its premier cru parcels occupy the same Kimmeridgian limestone terrain that defines Chablis' character.
Chardonnay, white only. Premier cru regulations apply: 9,000 vines per hectare minimum, potential alcohol around 11.0–11.5%, yields capped in the 45–48 hl/ha range.
