History

Les Preuses is one of the seven Chablis Grand Cru *climats*, positioned between Bougros and Vaudésir on the single grand cru hillside north of the village. The seven *climats* — and the Chablis AOC itself — received formal recognition in 1938.

Style & Terroir

Les Preuses sits on the shared southwest-facing slope at elevations between 150 and 200 metres, on the same Kimmeridgean limestone-clay-oyster-shell subsoil that underlies the entire grand cru hill. What sets it apart from its neighbours is sunlight exposure — among the seven *climats*, Les Preuses receives the most direct solar radiation, and that single variable shapes everything about its character.

Only Chardonnay is used. Grand cru regulations permit yields up to 54 hl/ha and require minimum potential alcohol of 11.0%.

The additional sun pushes ripeness higher and softens acidity, which means the sharp, saline minerality that dominates other Chablis grands crus is less prominent here. In exchange, Les Preuses delivers tropical fruit aromatics, honeyed notes, and a generous, almost buttery texture — terrain that sits closer to Côte de Beaune white Burgundy than to the austere mineral pole of classic Chablis.

Notable Producers

Domaine William Fèvre holds significant parcels and produces a balanced, widely available Les Preuses.

Domaine Vincent Dauvissat — one of the two great family houses of Chablis — works a minuscule holding prized for its purity and precision.

Domaine Louis Michel et Fils vinifies exclusively in stainless steel, making Les Preuses in an unoaked style that places fruit at the centre.

Domaine Gilbert Picq et ses Fils is a mid-size Chablis producer with a parcel here.

Domaine Jean-Marc Brocard, among the larger Chablis estates, also holds a presence in Les Preuses.

La Chablisienne, the leading cooperative of the appellation, rounds out the ownership.
