シャブリ、ラ・シャペル・ヴォーペルテーニュ、ミリーの3つの村に拠点を置くこのドメーヌは、伝統を重んじる造り手として知られる。特筆すべきは、ミレニアムの変わり目に機械収穫が主流だった時代においても、ラヴノーらと共に手摘み収穫を継続してきた数少ない例外の一つである点だ。醸造面でも古典的な手法を支持し、ステンレスタンクで発酵を終えた後、3月から翌年3月まで主に古樽を用いて1年間の熟成を行うスタイルを貫いている。保有する5つの畑はすべてプルミエ・クリュであり、ミリーのコート・ド・レシェ（1.99ha）をはじめ、ヴァヨン、モンマン、フルショーム、そして希少なロム・モールを擁する。確固たる信念に基づく実直なワイン造りが、このドメーヌのアイデンティティとなっている。

History
Jean Dauvissat is a Chablis estate working five premier cru parcels across three communes. The Dauvissat name carries weight in Chablis — a village whose cool climate and Kimmeridgean soils make it one of the most geologically distinctive appellations in all of France.
Winemaking Approach
Five premier cru parcels in Milly, Chablis, and La Chapelle-Vaupelteigne. The portfolio balances left-bank Côte de Léchet against the right-bank Fourchaume and L'Homme Mort — contrasting exposures that pull the wines in different directions.
