シャブリの町やスラン川を望む左岸に位置するヴァイヨンは、歴史的に高く評価されてきたプルミエ・クリュです。1932年には、当時の主要な格付けにおいてモン・ド・ミリューやフルショームといった著名な畑とともに、グラン・クリュに次ぐ重要な地位に据えられました。

この畑は複数のドメーヌが分割所有しており、ドメーヌ・ジャン・コレ・エ・フィスが10ヘクタール、ドメーヌ・ジャン・コレが9.34ヘクタールを擁する主要な造り手です。ほかにもドメーヌ・ヴォコレやドロワン、ロン・デパキなどが名を連ねます。グラン・クリュが飲み頃まで時間を要するのに対し、ヴァイヨンのような優れたプルミエ・クリュは、若いうちからその魅力を存分に楽しめる点も大きな特徴です。

History

Vaillons is one of the largest premier cru *climats* in Chablis, covering the left bank of the Serein river on south- and southwest-facing slopes just west of the town. Its sheer scale — 103 ha across 44 producers — makes it among the most widely seen Chablis premier cru labels on export markets. The name likely derives from old French for "little valley," reflecting the gentle fold in the hillside where the parcel sits. Like all Chablis premier crus, Vaillons grows on Kimmeridgean limestone soils, the fossil-rich calcareous clay that distinguishes the appellation from any other white Burgundy appellation.

Style & Terroir

Chardonnay, white only. At roughly 103 ha, Vaillons accounts for a substantial share of all Chablis premier cru production. The left-bank position and south-facing aspect give the wines generous fruit relative to some of the more austere right-bank premiers crus — still structured and mineral, but with a rounder mid-palate. Yields cap at 45–48 hl/ha under premier cru rules.The largest holdings are:
