History
Domaine du Chardonnay is a Chablis estate whose name is, inevitably, a statement of purpose. Chablis is the northernmost wine zone in Burgundy — geographically isolated, climatically demanding, and defined by the Kimmeridgean limestone soils that give its Chardonnay a cut and mineral salinity found nowhere else in the region. The domaine's founding details are not widely recorded, but its vineyard selection tells a coherent story.
Winemaking Approach
Four premier cru parcels across three communes — Chablis, Chichée, and Fleys — give the estate range along the full east-facing arc of the appellation. Vaillons and Montmains deliver the trademark green-tinged, flinty Chablis character; Vosgros and Mont de Milieu add textural and aromatic contrast from their distinct exposures.
