History

Gilles Bouton is a small estate based in Saint-Aubin, the hillside village tucked behind Puligny-Montrachet and Chassagne-Montrachet. Saint-Aubin sits high enough above the Côte d'Or escarpment that its wines long traded at a discount to its more famous neighbors — a gap in perception that has narrowed considerably as the village's premier crus gained attention.

Winemaking Approach

The domaine works four parcels, all premier crus concentrated in Saint-Aubin. That focus on a single village is typical of smaller Côte de Beaune estates, where a tight parcel-by-parcel approach defines the identity more than breadth of appellations.
