ニュイ・サン・ジョルジュのプレモー側に位置する一級畑オー・ペルドリは、その名の通りドメーヌ・デ・ペルドリが所有面積の大部分を占めており、事実上のモノポールに近い状態にあります。同ドメーヌは3.45ヘクタールを擁し、2006年からは1922年に植樹された高密度の古木区画から「レ・ユイット・ウヴレ」と名付けられた特別なキュヴェも生産しています。その他の主要な所有者にはドメーヌ・ベルターニャが名を連ねます。この畑から生まれるワインは、除梗を経て低温浸漬を行った後に醸造され、新樽を用いた長期の熟成が施される傾向にあります。ニュイ・サン・ジョルジュの中でも、特定のドメーヌの個性が強く反映される重要なクリュの一つです。
Aux Perdrix is a premier cru in Nuits-Saint-Georges, at the southern end of the Côte de Nuits. The village holds no Grands Crus, yet its premier cru mosaic is among the most substantial in Burgundy — Aux Perdrix sits within that tradition as a named *climat* with a long history of individual parcel identity.
