History
Jean & Sébastien Dauvissat is a small domaine in Chablis, the northernmost appellation of Burgundy. Here, Kimmeridgean limestone soils — ancient seabed packed with oyster fossils — give Chardonnay its characteristic flinty edge and saline tension. The estate holds three Premier Cru parcels, each in the hillside vineyards that define Chablis at its most focused.
Winemaking Approach
The estate works within the classic domaine-bottling model, keeping parcels separate to preserve the individual character of each climat. With three Premier Crus — Vaillons, Montmains, and Sécher — the range stays compact but covers the stylistic breadth of Chablis premier cru production, from the rounder texture of Vaillons to the more austere mineral lift of Sécher.
