ニュイ・サン・ジョルジュに位置する3.35ヘクタールのプルミエ・クリュ、レ・ペリエールは、ブルゴーニュでも極めて稀な特徴を持つ畑です。その名の由来となった石切り場が今も稼働していますが、露天掘りではなく畑の地下から大理石を採掘しており、その品質の高さが知られています。この地からは繊細で軽やかなスタイルの赤ワインが生まれますが、白ワインの産地としても注目に値します。アンリ・グージュは所有する0.41ヘクタールの全域でピノ・ブランを栽培し、ギィ・エ・イヴァン・デュフルールも一部にシャルドネを植えています。ロベール・シュヴィヨンやフォレ・ペール・エ・フィスらも名を連ね、この特異な地質がワインに個性を与えています。
Les Perrières is a premier cru in Nuits-Saint-Georges, at the southern end of the Côte de Nuits. Nuits-Saint-Georges carries no Grand Cru — an absence that has fueled debate for well over a century — but compensates with a substantial roster of premier crus producing structured, age-worthy reds. The stony name (*perrières* = stone quarries) repeats across Burgundy wherever limestone outcrops shaped the land.
